I would love it if there was a section built into Sales Manager Pro (Payment & Shipping) where I can fill in my: PayPal - payment will go to: . Everytime I post an auction I have to go to eBay an revise my auction to add my Paypal ID info. It's really a pain.

Hello,
You can set this up online, in Global Preferences, located in your My Account tab. Choose the "Include the PayPal Checkout button and logo" option. When you next open up pro and you sync, this will apply.
Note that if you select "Include the PayPal Checkout button and logo", eBay will insert a "Pay Now" button at the top of your closed listing. This button will take the winning bidder through eBay's checkout process (this option is unfortunately the only way that you can include PayPal in the list of payment options in red at the top of your listing.)
If you do not want to use eBay's checkout, and you would like to guide your customers to use your preferred checkout method, you can enable the AuctionWatch Checkout button which will appear in the listing once it has closed. For more information on this, please refer to this link:

You may find this helpful also if you decide to use "Include the PayPal Checkout button and logo". This prevents anyone trying to use the paypal checkout button from reaching the paypal checkout and they will get diverted to your AW checkout instead. This is a must use trick in this scenario.
Found this info in AW help.
Question:
How do I get buyers who go through eBay/PayPal checkout to use AuctionWatch Checkout?
Answer:
If you have a PayPal Premier or Business Account, you can set your Payment Receiving Preferences on PayPal to "Block Payments from users who initiate payments from the Send Money tab". By setting this preference, you can direct any buyers who try to pay directly via PayPal checkout to use your preferred AuctionWatch Checkout instead. Simply put the following URL in the "Alternate Payment URL" box:
http://www.auctionwatch.com/checkout.x
And also this:
Be sure to turn on WBNs when creating a listing, and be sure to include the AuctionWatch Checkout Button in all your listings.
