My eBay store logo,
was deleted today. I restored it through the recycle bin but I don't understand how it was deleted..it is viewed everytime someone looks at one of my auctions (now that the store header appears on top of the auctions). Doen't that viewing count?

Unfortunately no, in order to flag the image as viewed, the image would need to be clicked on. All images that have not been viewed within 90 days will be automatically deleted from our servers.

I don't use the click to enlarge in any of my auctions..viewing the auction seems to count as a "click"..or am I wrong about this?

The problem is that if you check the URL you are using for this logo, it is the "preview" url for the image, which will not trigger a reset of the date.
Find the image in your account, click to attach it from the Image Hosting page and have the system generate the HTML/URL for the image automatically. You will be able to pluck just the URL for this image from this code and use it instead, so the image deletion flag is reset for you when viewed.
