I'm going to sell a large quilt for someone who lives in Texas. In order to list it, I need to show it coming from her zipcode, not mine in California. Not sure how to do it, or if I can do it at all.

Well, I'm thinking it would help with calculated shipping, McJane. This is why I've asked this question; do I need to do that, or not?

Keep it simple. No need to complicate it. List with your zip. Since you are in Ca, the calculator will cover all shipping ranges. If you feel the need to refund should they pay too much postage you can do so after the transaction is complete.
PS, make sure your friend purchases and uses package tracking since it is your account that will take the hit if something should go amiss.

And if you change the paypal account to be her's that can cause your default to change to her's. I learned that the hard way!
No matter where you list from, you should have a 'ship from' field where you can enter a zip code. This is what is used for calculated shipping systems and what you would want to use to get a more accurate quote for those buyers.

That's not true at all. If she is in California and the quilt is in Texas and then she uses the California Zip Code and someone in California bids and wins, that person in California will under pay shipping significantly.
