I made some color adjustments to my Vendio gallery two weeks ago and when I check on them the colors are not showing up in eBay. I double checked my settings in Vendio and the correct colors are showing there.
Doesn't the gallery settings automatically update once you relist an item? Or am I missing something?

The color and style of the scrolling Vendio gallery is set within the HTML code for the gallery itself, so it only 'updates' when it is added back into a listing anew.
This means only if you relist your items directly from Vendio would the gallery then be added back to that item from scratch. Galleries that are still in the item description either because it's still live from when it was originally listed or if it was relisted from outside of Vendio (where the old gallery code would have remained in the item description) will you then still see the old version.
