Looking for some good slow cooker receipes that make great leftovers...

My favorite....Roast possum

Soak it in salted water for 12 hours, more or less, depending upon the size and the age of the 'possum. The larger older ones will take a longer soaking time. After it is soaked, parboil it in salted water for 30 minutes. Mix together:


3 c. bread crumbs
1 c. chopped onion
1/4 c. fresh chopped parsley
Sea salt & freshly ground pepper to taste
'Possum liver, chopped fine
1 beaten fertile egg
Stuff the 'possum with the mixture. Sew it up. Place in a baking pan with just a little water. Place in a 425 degree oven for 15 to 20 minutes. Pour off the juice and keep. Lay partially boiled sweet potatoes around the 'possum. Lay slices of bacon across the 'possum and potatoes to keep from drying out. Pour the juice back over both and let bake another hour or more depending on the size of the 'possum, basting frequently. When done take up on a platter and garnish with sprigs of parsley and sliced lemon. Put a baked apple or sweet potato in its mouth.

Number of servings depends on size of 'possum. Average 'possum serves 4.

hmmm....

I have had groundhog before though... roasted but not in a slow cooker...

anything less roadkillish there trai?

Roadkill??? What roadkill? We catch em, we grill them. Slow cooker works great with this.

If this is a serious question, this is my *favorite*:

peel and cut in half, around 8 potatoes. Place first in bottom of crockpot. I use the bagged baby carrots and pour in enough to fill in the holes between the potatoes. Slice some onion and place over carrots/potatoes. Brown a roast on all sides (even the cheap ones work well) and place on top of carrots/potatoes. Use either gravy mix or Au Jus mix and add water. Mix well and pour over meat.

In 8 hours you have the most tender meat, left overs are wonderful, and meat can be made into sandwiches.

As with all slow cookers, remember, the vegetables go on the bottom and meat on the top, because meat will create juices.

I have a couple of crock pot favorites too. I wasn't sure exactly what a 'slow cooker' was or if he was referring to cooking in a crock pot.

LOL, No I was talking crock pot/slower cooker... little bit of trivia, only Rival products can be called "crock pots" they have the patent on the word...

Another reason to put in the vegetables first is that vegetables like potatoes and carrots actually take longer to cook than the meat does!

When I was still feeding kids as well as us parents, I frequently used my crockpot. Filled it in the evening, plugged it in the next morning. Mmmm. Swiss steak, stew, homemade soup, spaghetti sauce, anything you make by cooking/simmering for a good while will taste better from the crockpot. And you don't have to watch it. In the summer, put the pot outside and you don't heat up your kitchen.

I think crockpots are coming back in popularity; I see a lot about them lately on TV.
