I don't have any leftovers - yet. We spent Thanksgiving with my Mom-in-law in a nursing home. I'm cooking today because my husband would be frantic without having a turkey to pick on. And yes, we are having company!
I usually don't have enough leftover to worry about so I just make a pot of turkey soup.

We don't have leftovers yet either. Had Thanksgiving at my folks yesterday, but I'm fixing it tomorrow for my hubby's folks.
Quick aside...the difference between stuffing and dressing (according to the gabby gourmet on the radio here) is that stuffing gets stuffed into the bird and dressing is cooked sans fowl. I never really knew what the difference was, but that makes sense.
My favorite post thanksgiving meal is to take the leftover dressing, cubed turkey and mix. Pour gravy over all and heat...yummmmm.

My very favorite leftover turkey recipe (and read no further if you don't like curry!):
Next-Day Turkey Curry
6 T. butter or margarine
3/4 cup raisins (or more)
2 medium onions, chopped
Curry spices (recipe follows)
1 T. cornstarch
2-3 cups bite-size pieces of cooked turkey
1 1/2 cup chicken broth (may need even more)
3 cups hot cooked rice
2 cups hot cooked peas (or other veg., like broccoli--something green, I suggest
1 C. each unflavored yogurt and cranberry sauce
In a large frying pan, melt butter over medium heat; add raisins and stir until they plump up, about 2 minutes. Lift our raisins and set aside. To the pan, add onion. Cook, stirring, until light golden, 10-15 minutes; then stir in spice mixture. Blend cornstarch into broth and add to onions. Cook, stirring until broth boils and thickens. Add turkey and cook just to heat through, about 5 more minutes.
To serve, spoon turkey curry over rice; accompany with the peas. Pass the raisins, cranberry sauce, and yogurt in separate dishes to add to individual portions. Makes 4 - 5 servings. (Can just add raisins to meat mixture if everyone likes them.)
Curry spices: Combine 1.5 tablespoons mustard SEED (very important), 1.5 to 2 tablespoons curry powder, 1/2 teaspoon EACH ground cumin and giner, and 1/4 teaspoon ground cinnamon.

I thought I was the only one who felt cheated without a turkey carcas to pick on.
We had our orphan thanksgiving at a friends house so I plan on cooking a little turkey
tomorrow here at home so I can have leftovers next week.
My mother used to make a sandwhich out of the dinner every thanksgiving. She would put turkey,stuffing,and cranberry together in one sandwich.
Now my fathers favorite recipe for leftover turkey went like this:
Put all the turkey together in one bowl.
Slide trash can toward edge of table.
Carefully tip bowl of turkey over the trashcan. Scrape to make sure all scraps have fallen into trash.
Bag up trash and leave on curb.

My husband does the turkey, stuffing and cranberry sandwich. I thought he was the only one who did that. I had to quietly called him aside and ask if it was OK to give out some leftovers. He said yes, but wasn't too happy.

The best part of Thanksgiving is the turkey sandwich later! All the pressure is off and it sure is mighty tasty!
