I always liked Woody Allen's interpretation: The injunction wasn't against eating ham; it merely suggested not ordering it at certain restaurants.

My grandfather used to have his black and jewish construction crew over for breakfast in his genteel neighborhood in Miami in the 1920's much to the distress of the neighbors.
They would have a big southern style breakfast and the first time they had a young
jewish guy they worried what he would be able to eat.
He pointed down table at a big platter of ham steaks and said "Pass the breakfast salmon please."
