Silkmoth: These suggestions are not exactly "health" foods, but they may serve as transition foods:
Will he eat sweet potatoes or collard greens? If you prepare them fairly plain..bake the sweet potatoes, and don't put much grease in the collard greens, they can be yummy and relatively healthy.
For potatoes, I like to use the little red ones, cut into quarters. Wash them well, but don't peel them. I toss them with Dijon mustard and a little olive oil. Then, roast in the oven at 400 degrees until they look brown and crispy. Slightly better than French Fries.
For chicken, you can use boneless, skinless chicken breasts marinated in something as simple as Worcestershire sauce. Then, baked in the oven. Tastes good, but is not fried.
Give them as much fish as you can...especially salmon steaks. I just broil them in the oven and sprinkle with lemon juice.
For your son, you might want to keep popcorn around instead of chips. Unbuttered, if he'll go for it. If he likes ice cream, try fruit sorbet instead. My kids love that.
Pile on the fruits. It's okay if they eat them one at a time. How about watermelon? He should go for that if he's from the South. Peaches? Cantaloupe?
Does he take vitamins? I remember my Mom talking about a formula she found recently that is designed to help people with heart conditions. I can't think of the name right now, but I can get it for you...if he will take vitamins.

My dad used to be the same as your husband. About 20 years ago his tests came out with extremeley high blood-sugar and cholesterol counts.
Lucky that his physician had known him for a long time and knew just exactly what kind of guy he was.
He managed to put the fear of god into my dad right away.
My mother was absolutely merciless, too. From one day to the other every "fun-stuff" to eat disappeared. No-chlesterol margarine for the whole family. Everybody got to eat low fat, sugar-free, nearly saltless.
She figured it wouldn't be fair if my dad was the only one to suffer.
I have learned one thing from her: if it isn't there you can't eat it!
One more thing: if he really thinks he has to go out and buy something when he has a craving he at least gets some exercise.
Another trick from my mom: save (and wash!) the wrapper of those unhealthy hot dogs.
Then buy the turkey/low fat kind and put it in the old wrapper. Bet you he won't even notice.
Especially in the beginning of my dad's diet my mom used the "creative packaging" method a lot.
He did catch her once!

Fruit does not get eaten if it is so - so. I see a lot of really nasty green fruit in the stores. Peaches and Necterines that when you smell them have no oder at all. If it does not smell like a peach when you buy it it will never taste like one before it rots. It is worth finding someplace that buys good stuff.
