My question is, if a buyer chooses to pay in a method which bypasses the vendio checkout, can I complete the vendio checkout for them myself, without charging them twice? In particular, I'm wondering if I can complete the checkout for buyers who use paypal without going through my vendio checkout.

Yes, I do it all the time. You just go to the post sale page and edit the buyer info (line 2). I don't know why people won't fill these things out. I have about 50% who won't.
