When I specify in my auction listing that I will sell to US only that information doesn't display in the auction listing. Am I missing something somewhere? I've lost some good sales because the shipping costs ended up being to high for the winning bidder.

That is an eBay specific field and does appear within the eBay area for shipping. The following image is directly from one of your listings:
If you want, you could edit your default listing text to add a note about US shipping only to all of your auctions automatically. You can do this via the My Account tab, under the Custom Listing Text section.
