To remove the mailing list option from the enlarged image page, go to My Account -> Global Preferences and scroll to the bottom of the page. Uncheck the "Include a "Join My Mailing List" link on my auction enlarged image pages." option and this will not appear in future auctions (it will still appear in active listings, however.
As far as the Gallery link goes, can you tell us what page this option is on? If you are referring to the Gallery button in your listings that points to your Store, there is an option under the Stores tab that will allow you to include this in all your listings.
