Are you trying to list through Vendio? If so, click Sales Manager at the top of the page and then on the side where it says eBay and you will be able to select your category.
On the listing page you can Edit Category partway down the page if you decide to change it.

There are major discussions going on now about the disappear of the books category on OTWA. That's a heck of a category to eliminate.
