Dang. I have to tell you I made this today because I Loooove Mexican food, but I usually resort to eating out in the restaurant every so often because no matter how hard I try, it's just not as good at home as it is when you eat out.

Now however...I finally made something as good at home as it is in the restaurant. This ROCKS! It about killed me all day smelling it cooking though!

I used two chicken breasts (there's only two of us and it was STILL too much food!) and we have one of those extra large crockpots so because I used the Walmart Thick and chunky brand of Salsa, I added a little bit of water during the day.

Refried beans. Lettuce sliced very thin. Tomatoes. Sour Creme. guacamole. Mexican Rice (easy as pie! I love the internet, you can find anything in 1 minute.)

Brown 1 cup of real rice in 3 tablespoons of oil. Add 1/2 can of Rotel tomatoes & chili (mine had cilantro too) and 1 1/2 cups water with 3 teaspoons of Knorr concentrated Chicken Broth (like bouillon cubes, but a liquid base) 15 minutes, turn off the heat and let sit for another 5 minutes.

Guacamole. Walmart in the Deli specialty section. They had the pasta and stuff there. I will never attempt to make Guacamole again after tasting this stuff. It's in a little bag inside a tub, it says "Garden Fresh Gourmet Salsa" "All natural gourmet guacamole made with fresh avocados" Yummy!

Threw it all on the table and ate. And ate. If it wasn't for the Dr. Steven Rosenblatt's starch blockers we've started taking yesterday I'd probably still be there eating. It was AWESOME and I NEVER say that about my own cooking. Thank you thank you whoever had that recipe! I will make it again when I have visitors - it was THAT good!

Mexican food cooking while one works on Ebay is great! (Note how I made this ebay related)
With a little heat, Salsa and lots of cheese you can make a rock taste good!

Try a flour tortilla with jam in it fried in butter flavored Crisco, Or fry a lengthwise slice of a banana fried in butter flavored Crisco for 3.00 minutes then add to floured tortilla and again fry until golden, add a little powdered sugar and WOW!

In the South we don't call it getting fat we call it "Thicking up".

Glassgirl--that was Jack's recipe, so be sure to give him credit for it. I made it earlier this week and it was just great. I like your ideas for the add-ons, too.

Jack, be careful with the pressure cooker. My late mother, bless her, never learned to watch a clock when she was cooking, once put some beans on in a pressure cooker and forgot about them. Thank goodness she was not in the kitchen when the thing blew. They had to repaint the ceiling and put in a new light!

I second the comments on Mexican food! I grew up in Texas so it is home cooking for me. Made chicken enchiladas with cilantro pesto last night. If any of the rest of you are on Atkins or any low carb diet, have you discovered La Tortilla Factory tortillas (3 net carbs per)? These tortilla as well as Breyers Carb Smart ice cream have been the salvation of our diet.

That wasn't Jack's recipe, that was dejapooh, so mucho gracie dejapooh! It was excellent..I sent it on to everybody I know that likes to eat!

But JACK DID get us on the subject so gracie to you too Jack!

As far as pressure cookers go, get one of the new generation pressure cookers where that thing doesn't go shooting off. I have one that is the size of a frypan and I use it ALL the time.

Vintageads4u, have you tried black soy beans? We get them canned at the health food store. I am not going to tell you that they taste just like pinto beans but with salt, chile powder, and some cheese we think they are not bad.

This is very funny!

I made the crockpot chicken with salsa also!

I used Paul Newman's Pineapple Salsa & made burritos with tomato/basil tortillas. Delicious!

Today I took leftovers to one my daughter's former teachers. I had told her about the recipe & she was anxious to try it, so I surprised her with burrito makings for lunch.

Keep the recipes coming!

Hi,
I crock pot a lot and I do near all of it OUTSIDE in the car port. Drives the neighbor's to the restaurant but don't bother me inside!

On the Crockpot chicken (above) I put about 1/2 inch salsa on bottom, one can of opened and removed refried beans in the corner and the chicken breasts in the salsa. Been on for four hours and looks and smells great I will add some frozen veggies 30 min before serving. When I serve it to wife (Who works) I will add steamed rice. A steamer is a cooking tool I found late in life and it is a wonderful and well used tool. (By steamer I mean vegetable AND rice steamer combo unit.)

I wonder if the cooking show TV channel is following this thread?

Remember this is eBay related as allows sellers more time to list, not cook!!

I'm thinking of making the Crockpot chicken Salsa in the pressure cooker next time. I'll let you know how it goes. Two chicken breasts and salsa in the bottoms of a 6 quart? crockpot was a little much. However, I had it for lunch today and I'll have it for supper again tonight.

LOL if you put Crockpot in Ebay they want to know if you mean "Crackpot"

I loooooooove Mexican food, but I'm Italian/Polish born and raised. So, I love chicken cacciatore, but don't like making it on the stove. So, I have my own version in the crockpot that is so easy. Take a whole chicken cutup and toss it in the crockpot. Then take a 32 oz jar, but if you need more make sure you add it, of sauce (not the plain stuff either) and throw that in. Then take a moment to cutup all the fresh veggies that you like. Personally, I add mushrooms, zucchini, squash, carrots, tomatoes and anything else in the house. Let it cook all day. Then I make up some pasta. Toss the chicken and veggie sauce on the pasta and you have a meal. This is so yummy!!!!

You're Welcome. The best thing about it is exploring. Use different salsas, try different meats (I used a nice tri-tip last week and it came out great). If you use fat free beans and rice with no oil, it is not at all bad for you.

WOW! It's not even 7am and this thread has made me hungry. Somehow, right now, my oatmeal just isn't cutting it! I will be trying the crockpot chicken and salsa today and the chicken cacciatore tomorrow!

glassgrl, I love the fact that we can find recipes so quick on the Internet too! Allrecipes.com is my favorite....

Okay ... i just gotta jump in here ... it's certainly ebay related if us ebay junkies favorite way to get by the day is crockpotting ... here is a fantastic HEARTY family favorite that is so easy:

CrockPot Chicken Stew

Place in the crock pot, IN ORDER of the number, starting with #1, and layer with the soups.

Soups = 2 cans Cream of Chicken (or Cr. of Celery) soup and
1 envelope package of Lipton Onion Soup mix

1. Carrots - cut in 2-inch lengths
2. Potatoes - cut into pieces
3. Celery - Cut in 2-inch lengths
4. 1 large Onion - cut into eighths
5. Boneless chicken parts

Cook it for about 4 or 5 hours, then stir to mix and cook till done [8 to 10 hours total]

serve it up with some nice substantial bread or rolls ... it is GREAT!

CrockPot
Shredded Chicken Sandwiches

bunch of boneless chicken
1 or 2 cans cr. of mushroom soup
salt, pepper, and onion powder 'to taste'

cook it up, smash/shred the chicken apart with a fork when it's done cooking and serve it on hamburger buns.

Simple, and substantial ... great for parties too. [wash down with 2buck charles]

One of the best bean receipes I have ever tried

1/2 medium onion chopped
5 slices of turkey bacon chopped
4 ounces of ground beef ( can be 80% lean)
1 (16 ounce) can vegetarian baked beans
1 (16 ounce) can red kidney beans, drained and rinsed
1/2 cup of tomato sauce
2 tablespoons brown sugar
1- teaspoons lquid smoke
1/2 teaspoons maple flavoring

in a skillet cook onions, ground beef and bacon until onions are tender

transfer to crock pot add all the remaining ingredients, give a good stir, then cook 4- hours on medium or 8 hours on low

comes out really tasty and all you need is a good bread.
