OMG -
You read my mind. I was going to come on here today and ask for the same thing. Only they are for me. I love them - they are expensive to buy.

My children and I love anything pickled. We buy pickled eggs, pickled beans (no plain green beans for us) pickled beets etc.

Thank you HCQ and the starter of this thread!

Thank you for the recipes. My grandmother used to make eggs pickled in beet juice and I lost the recipe years ago. Can't wait to try this one.

I save the pickle juice from jars of pickles and when I have enough saved I boil some eggs, about 12 to 18 of them and add the pickle juice to them in a big jar along with a hot jalapeeno pepper. The pickling process takes about 4 to 6 months for all of the pickling to reach the center of the eggs but it's well worth the wait.

HCQ,

Pickled eggs are a delight to the senses.

In college, my friends and I would dare each other to eat the most disgusting things on the menus wherever we were. One night, in a bar, the dare was the "eggs in a jar." Yum!

Three new fans of pickled eggs were born that night.

Well, seein' as how all three of our hens are laying now (that means nearly 2 dozen eggs a week for two people!), and they'll stop come February, it behooves me to put some of these up, doesn't it?

I'm sort of leaning toward spicy or Dixie, but not sure. Suggestions? I love pickled beets but the idea of pink eggs gives me the willies, and I'm not overly fond of cloves although I can stand a bit here and there.

As a child we at pickled pigs feet with my Father. Ugh - couldn't possibly eat them now... but pickling eggs in the left over pickle juice is a good idea - kiddo's would probably love them!

HartCottageQuilts~ I don't remember any cloves in the pickled eggs I used to eat so I'll leave them out. If you like pickled beets you'll like the eggs in beet juice. They do look strange but when I was a kid that was a plus. Actually they're kinda pretty.
