...Boiled Eggs that is...
With Easter around the corner Hard Boiled Eggs are popular. Here is how I do it.
I use to boil eggs 15 minutes, but I was listening to Emeril Lagasse and he said for perfect eggs you put the eggs in cold water, bring to a boil and then boil them for 3 minutes, then turn the burner off and let them sit in the water for 11 minutes on the burner, then pour off hot water and immediately put cold water in pan with eggs and let them sit for a awhile. This prevents the green ring around the yolks. They come out great.
For a quickie hard boiled egg for a salad try microwave.
Lightly spray with Pam a small microwave safe container (like a custard cup). Crack egg (or eggs) into container. Pierce yolk gently, cover and cook on medium power for 45 seconds. Check egg and finish cooking at 15 second intervals untill egg is solid. Let cool before slicing or chopping.

I'd like to mention to everyone that your eggs need to be at room temperature before you start to boil. Not because of the time, but the egg cooks differently and makes peeling the egg a lot easier. I guess it makes the inner linning of the egg seperate from the meat of the egg.

I do a lot of egg pickling and I found room termerature to start with best for peeling later on. But I'll certainly try your (Emeril's) way next time I make a batch. [Tip: after eating the last pickle in a jar, don't throw away the brine: boil small or medium sized eggs, peel and then place them in the pickle juice. Put them in the refrigerator for 3 weeks before eating. Don't re-use that juice after the first batch of eggs.]

can't imagine his rather rotund derriere sitting in anyone's easter basket...
ohhh Rawbunzel, it was terrible, just terrible. I had to use a whole can of airfreshener just to get in the door.
